i love going to St. Augustine to see my friend Hughie...it's all about food and fun and collaborating on interesting projects. every once in awhile i get lucky and get taken to The Magic House of Flynn.
this last time he was holding court with a whole mess of fried chicken and a few shrimp thrown in just to drive everyone crazy...there were gorgeous lima beans and a fat bowl of potato salad on the side and lots of good wine. every time i look at these photos i get to thinking about that fried chicken and almost want to cry...

Reminding myself of the deep satisfaction one gets when one can show up to a friend's home and immediately the cooking fest begins...i arrived at Hughie's place past midnite after the St. John's River Spectacular, Spectacular of Fireworks in Jacksonville. we didn't spend much time in our greetings but started straightaway into a conversation about food: what we both had for provisions, what we wanted to do with said provisions and what the next six meals might be...at the moment we're entertaining 2 guests with sliced cold chicken with vinegar sauce, pasta salad with poblanos and gin and tonics. the $14.95 burger is up on tap...here's a preview:

Fun with Zucchini
i have to say a word about zucchini. i don't want to forget what i've been doing with it all week. it's not nasty....
Zucchini and Shrimp or Chicken with Basil and Pasta:
-sliced in thin rounds, on cookie sheet, not crowded- a little olive oil, broiled quick like till brown and crisp.
- leftover chicken, shredded or sliced shrimp cooked on stovetop- hot black pan.
- the sauce is a broth from my roasted chicken that had seasoned rice wine vinegar splashed on to it as soon as it came out of the oven. thin sliced onion was also thrown on as soon as it came out.
- heat the pan to hot, add chopped onion and broth to reduce, then a splash of cream.
- add fresh basil.
- i like fettucine nests. cooked and cooled and waiting til all the other elements are ready.
- re-heat the sauce, add the shrimp or chicken and the zucchini.
- have warm bowl ready with pasta and ladle the sauce over it.
- add shreds of good hard cheese.
- clear a table quickly, grab a glass of wine and try to slowly eat this wonderful dish.
